An aromatic coffee sauce adds intensity to the flavour, and caramelised hazelnut pieces lend crunch. Another great favourite from the Mövenpick Hall of Fame, dating back to the earliest days of Mövenpick ice cream.

Espresso Croquant

The preparation is an art, the result dazzling. Under high pressure, water heated to just 96º C is pressed through approximately 7 grams of perfectly ground coffee in less than 20 seconds. In this way a maximum of 50 ml of espresso drips down into thick, preheated 80 ml cups.

Did you know: The crema, that hazelnut brown, slightly mottled foam, must be thick enough to hold the sugar on top (the ‘island test’).


Espresso Croquant is perfect with...

Sweet dishes and desserts: 
  • Pears poached in espresso syrup 
  • Tarte au chocolat
  • Almond amaretti
  • Blancmange or panna cotta with grappa

Add 2 teaspoons sugar and a little grappa to a serving of cold espresso to taste. Crush with 6-8 ice cubes (similar to making granità). Pour into glasses and serve with Espresso Croquant ice cream.
