The Gruyère district is a double cream paradise. The fat content of this cooking and table cream is around 50%. You can't whip the cream until airy, as it only gets thicker. However, thanks to its thickening characteristics, it can be used to give soups and creams a thick, velvety texture.

Double cream has a slightly sweet flavour. It’s ideal for serving with meringues or chocolate cake.

The best meringues should be an ivory colour, with a caramel-coloured base, and are best baked in a wood-fired oven. They are as light as a feather despite their size. This is because the egg whites, beaten with either caster or icing sugar until stiff and glossy, fluff up when slowly baked at 80° C.

The French meringue dessert called "baiser" (French for ‘kiss’) is made up of two meringues stuck together with melted chocolate. Macaroons also contain nuts and sometimes some flour as well.

The national dessert of New Zealand is a giant meringue with a marshmallow-like texture, served with cream and kiwi fruit.
