White Chocolate ice cream, chocolate brownie & vanilla coulis.

Ingredients

Mövenpick White Chocolate

For 4

80-120 g of vanilla and walnut coulis
4 chocolate brownies
8-12 caramelized walnuts
4 leaves of mint
8 large scoops of Mövenpick White Chocolate

Vanilla and walnut coulis:
70 cl milk
4 egg yolks
1 vanilla pod
80 g sugar
60 g ground walnuts

Preparation

Vanilla and walnut coulis:
Split the vanilla pod down its full length. Scrape out the vanilla seeds and add to the milk with the two halves of the pod and the ground walnuts. Bring the milk to the boil. While this happens, mix together the egg yolks and sugar in a large bowl. Slowly pour in the boiling milk. Lightly whisk the mixture. Put the mixture back onto the heat and heat gently.

Plating:
Arrange the vanilla-walnut coulis on a plate. Add the Chocolate Brownie cut in three pieces. Add the ice cream scoops. Decorate the edge of the plate with the caramelized walnuts and the mint leaf.
