Raspberry & Cream ice cream with red berry jelly.

Ingredients

Mövenpick Raspberry & Cream

For 4

400 g red berry coulis
Sugar and lemon juice, added to taste
8 sheets of gelatine
160-200 g mixed berries, e.g. blackcurrants, blueberries, cut in two depending on their size
4 scoops of Mövenpick Raspberry & Cream
Lemon balm leaves
Mixed berries

Preparation

Red berry jelly: 
Mix the berry coulis with the sugar and the lemon juice. Soak the gelatin thoroughly, melt it in the bain-marie and incorporate it into the berry coulis whilst stirring. Pour half into a dish rinsed under cold water, spread the berries on top and then cover with the rest of the coulis. Refrigerate, covered, for 2-3 hours to set.

Plating:
Serve the red berry jelly on a plate with a scoop of Raspberry & Cream ice cream.Garnish with the lemon balm and berries.
