Pistachio

More about pistachios...
Pistachios belong to the same family as mangoes and cashews. Iran and the USA are the major producers. The drupes of a deciduous tree that can grow up to 10 meters tall, pistachios ripen in October, when the outer husk pinkens. The seeds then separate from the shell.

Did you know: About a month before ripening, the shell partially opens its closed husk. This is why the fruit is also known as the ‘smiling pistachio’ in Iran.

Pistachios have a pleasant, mildly aromatic, nutty or almond-like flavour.

Pistachios are yellow or green depending on the variety. The green nuts  are the mostprized.
*Advieh is a ground spice mixture made from 4 tablespoons pistachio nuts, 1-2 tablespoons ground cinnamon, 1 tablespoon each of cardamom and dried rose petals, 1 tablespoon saffron strands and 2-3 tablespoons sugar. Combine the ingredients and blend in a spice grinder.
