Yoghurt came to the West from Asia and has been a staple here since the 1950s. This cultured milk product stays fresh longer than milk and is easier to digest too. The characteristic flavour and texture of yoghurt is due to part of the lactose, or milk sugar, being fermented by lactic acid bacteria.

Did you know: Yoghurt is healthy. In mountainous regions of Bulgaria, yoghurt made from fresh milk is part of the simple daily diet. The people here live to an unusually old age.

Yoghurt drinks such as lassi, raiti ayran, etc. can be made with vegetables (cucumber) or fruit (mango) and seasoned with various herbs.

Blueberries, blackberries and redcurrants are common berries that can still be found growing in woodlands. Blueberry pieces lend the sorbet a touch of extra juice.

Combine the frozen berries in a blender with a little icing sugar, lemon juice and cream and mix until well blended. Chill until half frozen, place in a glass and top with Yoghurt & Forest Fruit.

Red berry compote is a berry “soup” (berry puree with whole berries), thickened slightly with tapioca (made from cassava root). Tapioca takes on a glazed appearance when moistened and has a neutral flavour.
