More about almonds...
All around the Mediterranean, almond trees bloom with pink flowers in spring. They belong to the same genus as apricots and cherries. Ground almonds have been used to make a kind of ‘milk’ since classical times. It was Arabian cuisine that perfected the process of turning almonds into marzipan and other confections.

Almonds, with the obvious exception of bitter almonds, have a sweetish, delicately nutty flavour. The classic blancmange was once also served with poultry, fish or rice.

Bitter almonds contain hydrogen cyanide. Small amounts are used to flavour creams and baked goods.


Vanilla Dream

Vanilla pods are the fruit of orchids. They grow as parasites on trees in tropical forests. The pods, which are 15 cm long and a greenish-yellow colour, become dark brown and release their flavour after curing.

Vanilla has a sweet scent; the pods release their flavour when boiled.
