The fruit was originally considered more of a curiosity and was used as decoration. The Arabs were the first to cultivate this evergreen tree in the Mediterranean.

Did you know: Because of their yellow colour, in the 16th century lemons were considered ‘sun food’. They often appear next to glasses or goblets in still lifes, artfully peeled.

The acidity in lemons enhances the flavour of other ingredients, just like a pinch of salt.

More about limes...
Limes are as important in tropical countries as lemons in the subtropics. The fruits are small, roundish and have either a smooth or knobbly peel depending on the variety. They have considerably more juice than lemons.

Did you know: Limes are picked before ripening. If left on the tree, they will gradually change from orange to yellow as they ripen.

Tropical fruits such as papaya, guava and avocado taste best when sprinkled with a little lime juice.
