The Amaretto was created in Italy where legends differ to tell the origin of this famous liquor. It is believed that the Amaretto was created in the 16th century by a widow as a gift for her new artist lover: a blend of brandy, apricot pits and spices. Surprisingly the Amaretto does not always contain almond but the typical almond-like flavour rather comes from the mix of apricot pits with spices and sometimes vanilla. With its bittersweet taste, the Amaretto is a favourite in Italian pastries such as Tiramisù and Panna Cotta but is also enjoyed in cocktails and savoury dishes.In gastronomy, the Amaretto liquor enhances the nutty flavor of an almond recipe.

All around the Mediterranean, almond trees bloom with pink flowers in spring. They belong to the same genus as apricots and cherries. Ground almonds have been used to make a kind of ‘milk’ since classical times. We have Arabian cuisine to thank for the process of turning almonds into marzipan and other confections. Almonds, with the exception of bitter almond, have a sweetish, delicately nutty flavour. The classic blanc-manger was once also served with poultry, fish or rice.Bitter almonds contain hydrogen cyanide. Small amounts are used to flavour creams and baked goods.
