Bananas are the second most important fruit in the world after citrus. They originate in the humid tropics on both sides of the equator. Bananas take three months to ripen. They grow in ‘bunches’ of up to 300 bananas. They are always harvested green (also in the countries where they’re grown) and are carefully ripened under controlled conditions. The flavour compounds in bananas do not develop until the fruit has gradually turned yellow: it’s then that the starch is converted into sugar.
