Cassis, or blackcurrants, are extremely valuable berries, rich in vitamins, particularly vitamin C, minerals and fibre. They ripen in early summer and are sold until the middle of August. Water-soluble pigments, anthocyanins, give the peel its intense purple-black hue. Blackcurrants have a tart and mild or bitter flavour. The berries are usually processed into syrup, liqueur, jelly or candies.
