Cappuccino has become the most popular of all white coffees. An espresso lungo (made with twice as much water as a normal espresso) is served in a thick cup with equal parts hot milk and hot milk foam. Cappuccino is sweetened with sugar and drunk with breakfast. Also: The name cappuccino comes from the Cappuccino monks, a characteristic sight on the streets of Rome. It was the baristi, or café barmen, here who gave the frothy coffee its name. For the foam, heat the milk with herbs or spices. Remove these prior to frothing.To get good milk foam the milk should never exceed 70º C. When the foam is poured into the espresso, it will combine with the dark crema (coffee foam), creating the drink’s typical appearance. Connoisseurs use a blend of Robusta and Arabica beans to get the ideal crema.
