INFORMATION/HISTORY
Cinnamon is one of the oldest known spices whose history dates back to ancient times where it was first used as a perfume and for medicinal purpose before entering gastronomy. Originally from Sri Lanka but now cultivated in all the tropical regions, cinnamon is the inside bark of a tree from the bay family that can grow up to 15m high. When harvested, the bark is curled up and dry; it contains essential oil.
