Cognac is one of France’s (and the world’s) best brandies. Cognac is produced in only one region, Charente. The soil there is chalky and the climate ideal for the Ugni Blanc grape variety. Cognac VSOP (Very Special Old Pale) is aged in oak barrels for at least five years. Also: The Charentais were originally successful in the salt trade before distilling wine. And it was Dutch sailors who helped give cognac its big break: they preferred drinking ‘brandewijn’ to normal wine. In China, cognac diluted with water is a popular accompaniment to a meal.
