The Gruyère district is a double cream paradise. The fat content of this cooking and table cream is around fifty percent. It’s not possible to whip the cream until airy, as it only gets thicker. Thanks to its quality as a thickener, however, it will give soups and creams a thick, velvety texture. Also: In Gruyère, double cream is served in a round wooden pot. A carved wooden spoon is used to scoop the cream. Double cream has a slightly sweet flavour. It’s ideal for serving with meringues or chocolate cake.

The best meringues should be an ivory colour, with a caramel-coloured base, and are best baked in a wood-fired oven. They are light as a feather despite their size. This is because the egg whites, beaten with either regular or confectioner’s sugar until stiff and glossy, fluff up when slowly baked at 80° C. Also: The French version of the meringue is called baiser (French for ‘kiss’). Macaroons also contain nuts and sometimes some flour as well.
