Lemons are used in almost every cuisine around the world. Citrus limon, the lemon’s Latin name, probably originated in northern India and is a cross. The fruit was originally considered more of a curiosity and was used as decoration. The Arabs were the first to cultivate this evergreen tree in the Mediterranean. Also: Because of their yellow colour, in the 16th century lemons were considered ‘sun food’. They often appear next to glasses or goblets in still lifes, artfully peeled.

The acidity in lemons enhances the flavour of other ingredients, just like a pinch of salt.

Lime

More about lime...
Limes have the same significance in tropical countries as lemons do in the subtropics. The fruits are small, roundish and have either a smooth or knobbly peel depending on the variety. They have considerably more juice than lemons. Also: Limes are picked before ripening. If left on the tree, they will gradually change from orange to yellow as they ripen.Tropical fruits such as papaya, guava and avocado really take on the best flavour when sprinkled with a little lime juice.
