Lemons are used in almost every cuisine around the world. Citrus limon, the lemon’s Latin name, probably originated in northern India and is a cross. The fruit was originally considered more of a curiosity and was used as decoration. The Arabs were the first to cultivate this evergreen tree in the Mediterranean. Also: Because of their yellow colour, in the 16th century lemons were considered ‘sun food’. They often appear next to glasses or goblets in still lifes, artfully peeled.

The acidity in lemons enhances the flavour of other ingredients, just like a pinch of salt.
