Wherever sugar cane is grown, e.g. on the Caribbean islands, rum is also made. Either molasses or a blend of sugar cane, juice and water is fermented. This “sugar wine” is then distilled and diluted with water. To achieve high quality, the rum is laid down like wine in barrels: if these are made of stainless steel it remains white, but if they are of old wood the rum takes on a darker hue and acquires a more intensive taste. By the way, rum is said to be a romantic beverage. Depending on the chosen recipe, rum is a refreshingly cool drink for the summer (cocktails with fruit, e.g. Daiquiri, Planters Punch) or warming and invigorating in winter (egg nog, mulled wine). Connoisseurs like to drink rum neat on the rocks or in highball glasses with iced water or soda.
