Wherever sugar cane is grown, e.g. on the Caribbean islands, rum is also made. Either molasses or a blend of sugar cane, juice and water is fermented. This “sugar wine” is then distilled and diluted with water. To achieve high quality, the rum is laid down like wine in barrels: if these are made of stainless steel it remains white, but if they are of old wood the rum takes on a darker hue and acquires a more intensive taste. By the way, rum is said to be a romantic beverage. Depending on the chosen recipe, rum is a refreshingly cool drink for the summer (cocktails with fruit, e.g. Daiquiri, Planters Punch) or warming and invigorating in winter (egg nog, mulled wine). Connoisseurs like to drink rum neat on the rocks or in highball glasses with iced water or soda.

Raisins (from seedless, large dark grapes), sultanas (from seedless, medium-sized white grapes) and currants (from seedless, small Black Corinth grapes) are the three main varieties of dried grapes. These come from the countries around the Mediterranean and can be found in the most varied sizes, colours and flavours, depending on the grape variety. Specialties include large Malaga raisins, Smyrna sultanas and raisins of Corinth. They have been used in both sweet and savoury dishes since classical times.
