Stracciatella and amaretto mousse recipe

Stracciatella, Amaretto foam

  • 200 ml pear juice
  • 150 ml amaretto
  • 2 gelatine sheets
  • Chocolate shavings, orange zest and kumquats

  • Mövenpick Stracciatella


  1. Soak the gelatine sheets in cold water for 5 minutes.

  2. Heat the pear juice until it almost starts to boil, remove from the heat and add the dried gelatine sheets.

  3. Stir gently and add the amaretto. Mix well.

  4. Pour the mixture into a cream whipper and close it.

  5. Use 1 to 2 gas cartridges depending on the size of the cream whipper.

  6. Leave to cool upside down in the fridge for at least 4 hours.

  7. Place the mixture directly into glasses.

  8. Decorate with the chocolate shavings, orange zest and kumquats.

  9. Add a scoop of Stracciatella ice cream. Serve immediately.
